Fried Rice and Shredded Beef Stir-Fry

I have come to realize that Stir-Fries are among the fastest and easies meals to prepare and so it is one of my main meals at home as i love fast, easy, delicious dishes... Don't you? hehehehe
So make sure you always have beef and chicken breast in the freezer.

Ingredients

  • Beef Sirloin
  • Carrots 
  • green pepper
  • red pepper
  • green peas
  • mixed vegetables 
  • rice
  • hoisin sauce
  • soy sauce 
  • ginger cornstarch 
  • beef stock
  • sesame oil


Lets Cook
1. Boil the rice. Add some chicken or beef stock in it. Not too much water.
2. Cut the beef, carrots, green pepper and red pepper horizontally.
3. Put a pan on heat, add sesame oil, add onions, pour in the shredded beef and stir.
4. Mix the beef stock, hoisin sauce, soy sauce, ginger and cornstarch. Mix well until smooth. Add the mixture to the chicken on heat and bring to a boil.
5. Put another pan on heat, add butter, when hot stir in onion, vegetable mix, add salt, seasoning, stir. Pour in the rice and stir.
6. Serve the rice and shredded beef stock. Enjoy.

Chinese Egg Fried Rice

I always make this fast and beautiful looking fried rice, i compliment it with different sauce as you would do if you to a Chinese restaurant...With Sweet and Sour sauce, stir fry sauce, tomatoes sauce, e.t.c...Loaded with vegetables, this dish is perfect...Wink

  • rice

Vegetable Stir-Fry

Made an Asian inspired fried rice and wanted a sauce to go with it, had a lot of vegetables in the fridge and so decided to make a vegetable stir-fry.
You can use as many vegetables you want, peanut oil would be perfect for it but didn't have so i used sesame and soya oil. This is a really good, healthy and nutritious meal...You should try it out...Wink

Ingredients

  • cabbage cut into big pieces
  • carrots cut into big pieces
  • green pepper cut into big pieces
  • mushroom roughly chopped
  • cayenne pepper
  • runner beans chopped
  • spring onions chopped
  • onions chopped
  • soy sauce
  • cornstarch
  • sugar
  • ginger
  • chicken stock/vegetable stock
  • sesame oil
  • soya oil


Lets Cook
1. Put a pan on heat. Add a little sesame and soya oil. When hot pour in the onions and ginger. Stir.
2. Add the mushroom, carrots, cabbage, green pepper and stir. Add the spring onions, runner beans and peas.
3. In a small bowl mix the stock (if you don't have you can melt seasoning in warm water), soy sauce, cornstarch and a tbs of sugar. Mix and make sure it is well combined.
4. Pour the vegetables sauce, add cayenne pepper and keep stirring, make sure you dont over cook your vegetables. When it is thick, it is ready to be served with your rice.

Parmesan Chicken, Chinese Fried Rice and Tomatoes Sauce

Hello friends, We would be learning how to make an easy oven cooked parmesan Chicken, fast and easy Chinese fried rice and a tomatoes sauce to go with it..Wink

Ingredients

  • chicken breast
  • rice
  • mixed frozen vegetables
  • cumin powder
  • paprika
  • cayenne pepper
  • salt
  • soy sauce
  • sesame oil
  • butter
  • fresh tomatoes diced
  • green pepper diced
  • tomatoes paste
  • seasoning
  • Italian seasoning 
  • onions diced
  • garlic powder
  • eggs
  • olive oil
  • curry powder
  • Parmesan cheese grated


Lets Cook...
1. Put your rice on heat and parboil it. Make sure the chicken breast is at room temperature. Turn on your oven to 170c.
2. Gently massage the chicken breast with salt, paprika, cayenne pepper, garlic powder, Italian seasoning, cumin powder, curry powder, seasoning, sprinkle olive oil on it and let it rest for a few minutes then put it in the oven rack for 25 -30 minutes.
3. Bring the chicken out, generously sprinkle the Parmesan cheese on top and put it back in the oven until the cheese is melted then the chicken is ready.
4. The rice should be in a strainer at this point. Put a pan on heat enough to take the rice. Add sesame oil and butter. When hot add onions and garlic, stir for like 3 minutes. Stir in the frozen vegetables.
5. Break the egg in a bowl, add soy sauce, very little salt, sesame oil, cayenne or black pepper, and whisk well. In a separate pan heat a little sesame oil or butter or little of both. Pour the egg mixture, allow to set, make sure it doesn't burn. Remove the egg to a chopping board and dice it.
6. Pour the diced fried egg into the vegetable mixture and turn. Stir in the rice and mix well.
7. Lets make the tomatoes sauce; Heat little olive oil and butter in a pan. Stir in the onion and garlic, add the diced tomatoes, tomatoes paste and green pepper, add chilli pepper or cayenne pepper depending on how you like chilli. Add salt, seasoning and a little sugar to balance the acidity.
8. Your dinner is ready to be served. Preparations and everything should take less than 50 minutes...Enjoy

Chinese Chicken Balls with Sweet and Sour Sauce

Made this delicious Chinese recipe last night, i was scared it was going to be too sweet because of the brown and white sugar in it but to my surprise it wasn't. Loved it, will definitely make it again with green pepper, red pepper and spring onions bet it will make it taste even better. It is super fast to prepare and taste even better the day after that is if you have leftovers...Wink


Ingredients

For the sweet and sour sauce
  • ketchup
  • white vinegar
  • cornstarch
  • brown sugar
  • white sugar
  • water or pineapple juice
  • soy sauce


For the chicken ball

  • chicken breast cut into bite sizes
  • flour
  • cornstarch
  • garlic powder
  • baking powder
  • baking soda
  • sugar
  • sesame oil
  • salt
  • water


Lets Cook
1. To make the sauce. Put ketchup, soy sauce, white vinegar, brown sugar and white sugar in a sauce pan and mix well until combined.
2. Mix the cornstarch and water or pineapple juice in a bowl until smooth. Pour it into the sauce mixture and bring to a boil stirring constantly. Keep stirring until it thickens up it will take time.
3. Lets make the chicken balls. Mix the flour, cornflour, salt, baking powder, garlic powder, baking soda, sesame oil and water. Mix very well until smooth.
4. Add the chicken pieces and coat very well.
5. Heat oil in a pan or deep fryer. Put the chicken and fry until golden brown. Remove and move to a paper tower..
6. You can either add it to your sauce or serve like that.
7. Serve with your hot rice and enjoy.

Chicken Stir-Fry

This recipe is a winner any day and you wouldn't believe how easy it is to prepare. I first saw it on Paula Deen show on food network and then i noticed all the ingredients she used can be found in our market here and then i decided to prepare it.
What i love most about this meal is the fact that it is filled with vegetables, it is indeed very healthy and you can use whatever kind of meat you like, meat, chicken, pork, turkey, e.t.c, and also substitute vegetables add as many as you wish, it will always turn out tasting and looking awesome...

Ingredients
  • vegetable oil
  • sesame oil
  • chicken breast
  • mushroom
  • carrots
  • red bell pepper
  • yellow bell pepper
  • green pepper
  • onion
  • broccoli
  • can water chestnuts
  • chicken broth
  • ginger
  • soy sauce
  • hoisin sauce
  • cornstarch or cornflour

Lets Make It...

1. Slice the chicken into very small thin pieces, cut all vegetables into bite size, the carrot, red,yellow and green pepper, broccoli, can water chestnut and onions.
2. In a large pan, heat the oils (vegetable and sesame oil) about a tsp each depending on the amount of chicken you are preparing. Add the chicken and stir for about 5 minutes or until lightly brown and no longer pink.
3. Pour in the vegetables, broccoli, carrots, can water chestnut, onions, green,red and yellow pepper. Stir for another 5 minutes. Add the water chestnuts.
4. In a small bowl, combine chicken broth, hoisin sauce, soy sauce (a TBS not too much or it may become too salty), ginger and cornstarch. Mix well until smooth.
5. Add the mixture to the chicken on fire and bring to a boil over medium heat.
6. Reduce the heat and simmer for about 5 minutes or until the sauce thickens.
7. Serve over hot cooked rice.
