Ingredients
- yam cut into tiny pieces
- onions roughly chopped
- tomatoes diced
- garlic (optional)
- salt
- cayenne pepper/chilli pepper
- seasoning
- thyme
- butter
- egg
- flour
- breadcrumbs
- oil for deep frying
Lets Make It...
1. Put the yam into a pot with enough water to boil it (the water will dry up in the pot so just enough to make it very very soft). Add onions, garlic gloves, butter, salt, pepper, thyme. Cover and allow to cook till its very soft. Add the diced tomatoes.
2. Break the egg in a plate and whisk. On a flat surface pour flour. Pour breadcrumbs on a try or another flat surface.
3. Take the yam off heat when well cooked and water dried or almost dried. Mash with a potato masher or pound in a small mortar.
4. Roll into a ball on the floured surface. Dip in the egg and then roll and cover it up with the breadcrumbs.
5. Put a pan on heat with oil. When hot. Deep fry the yam balls until golden brown and move to a paper tower.
6. It is ready to be munched...Enjoy
