MOI-MOI

Moi-Moi is one of the Nigerians favorite side dish aside Plantain. It is made out of beans like the bean cake (Akara).
But most people find it stressful to wash the beans very clean and grind, most people including me! lol. So i decided to try the lazy way out to know if it will still give me the desired result and am telling you the truth and nothing but the truth...It WORKS!!! I used bean flour and it tasted no different!!! Really enjoyed it and have been making Moi-Moi like no mans business because of course its so fast and easy plus i don't have to wash any beans again! ever! hehehe... Wink.
Moi-Moi
Ingredients:

  • bean Flour
  • red ball pepper (tatashe)
  • chilli (atarodo)
  • ginger
  • garlic
  • onions 
  • curry powder
  • thyme
  • crayfish (optional)
  • prawns (optional)
  • eggs (hard boiled, diced, optional)
  • fresh titus fish (boiled and shredded)
  • vegetable oil
  • salt
  • seasoning 
  • hot water


Lets Cook:
1. Put the red ball pepper (tattoo, chill (atarodo), garlic, ginger, onion, and crayfish in a blended. Blend until smooth.
2. Pour the required amount of bean flour you want in a bowl. Pour in the blended paste to give it a beautiful color. Pour in hot water not too much else you Moi-Moi will be too light. Stir until smooth.
3. Add the prawns, diced eggs, shredded fish, little vegetable oil, thyme, curry, salt, and seasoning.
4. Put a put big enough to contain all the Moi-Moi plates or Leaves. If you are using leaves, gut out the stem and use as a bed. Add little water and cover the pot.
5. Oil your Moi-Moi plates if you are using plate, you can use the Moi-Moi leaf if you can wrap it up properly. Add the mixed mixture to it. Move to the pot gradually, don't over crowd the pot.
6. It requires steam to cook so cover tightly. Check from time to time if there is still water, pour in water from the side of the pot be careful so it doesn't get into the Moi-Moi and put little water at a time. Use a fork or toothpick to check if it is ready, if it is hard then it is ready to e eaten.
7. you can eat your Moi-Moi alone or use as a side dish for Rice. you can also enjoy it with salad or with garri. Wink
