Salmon and Pasta in Cream Sauce

We have been doing a lot of fish lately and salmon tops the list, so i always look out for new recipes with salmon especially wild caught salmon.
Made this lovely wild caught salmon and pasta in cream sauce. I bet you would love it...Wink
Salmon and Pasta in Cream Sauce 

Ingredients:

  • wild caught salmon
  • salt pepper
  • olive oil
  • pasta
  • cream
  • tomatoes (diced)
  • butter
  • mustard
  • onions (diced)
  • garlic (minced)
  • basil
  • thyme


Lets Cook It:
1. Boil your pasta a la dent. Remove from heat, shifter and set aside.
2. Put a pan on heat. Add butter. Pour in the onions and garlic. Stir for about a minute, pour in the diced tomatoes.
3. Add the cream. Stir in about a table spoon of mustard and stir. Add salt, pepper, thyme, curry and basil. Taste and adjust seasoning. Allow to boil for about 5 minutes.
4. Pour in the pasta and stir. Make sure it all comes together well. Turn the heat really down and cover.
5. Put another pan on heat. Add little olive oil. Pat the salmon with salt and pepper. When the oil gets hot carefully put the fish. Give it 3 Minutes on both sides (All the recipes i saw said 5 minutes on both side but i felt it was too much even thought i did 4 minutes it was almost dry, i got lucky there so its either my salmon was thiner than theirs or i really don't know so i guess it has to do with the thickness but as you may know if Salmon is overcooked it gets dry so you have to avoid that).
6. Serve your pasta and the salmon, if you have fresh parsley or basil you can use to garnish and enjoy...Wink
