1. Clean the fish very very well, scarp well. Turn on the oven to 375/175.
2. Mix the marinade: This will depend on the amount of fish and how large the fish is, i used: 3tbs of brown sugar, 1tbs of black pepper, 1tbs of soy sauce, 3tbs of oyster sauce, 1tbs fish sauce, 2 gloves of minced garlic, half lemon juice and lime juice.
3. Make vertical or horizontal cuts on the fish. Rub the marinade on it, make sure they get into the cuts you have made. Reserve the remaining marinade.
4. Get some full garlic gloves, about 3 and cut the lime into about 5 round shape. Stuff the garlic gloves and lime into the open part of the fish.
5. Put the Fish in a foil. Make like a tent around the fish, don't allow the foil to touch it. Fold it well to make sure there is no opening. Put in the oven and bake for 25 minutes depending on size and thickness of the fish. If after this time the fish is still pink put it back and give it another 10 - 15 minutes.
6. Bring out the fish and turn your oven to grill. Spread foil paper on an oven rack. Put the fish back on it and brush the remaining marinade on top. Grill for between 5 - 10 minutes or until the fish is nicely browned like looking crisp.
7. And it is ready to be enjoyed my friends.
