Potato Cake with Mushroom Sauce

I tried this recipe the other day and it was absolutely DELICIOUS!!! Loved it...When i first saw it i thought it will be a mushy mess and decided to make a little one to try out before serving it to anyone and i was shocked when i tasted it! Try it out and let me know what you think about it...Wink

For the Potato Cake
  • potatoes boiled and mashed
  • egg beaten
  • flour
  • bread crumbs
  • dill or coriander or parsley finely chopped
  • salt
  • oil for deep frying
For the Mushroom Sauce

  • mushroom sliced
  • onions diced
  • carrots cut in long strands
  • green pepper cut in long strands
  • cream
  • flour
  • salt
  • pepper
  • mustard
  • butter
  • chicken stock or seasoning

Lets Make It
1. Mix the mashed potatoes with the egg and flour. Add salt and pepper. Add whatever vegetable you are using.  Mix very well.
2. Pour the breadcrumbs in another bowl or on a parchment paper. Form a ball with potatoes and roll it on the breadcrumbs and make sure its completely coated. Let it rest for few minutes.
3. Heal oil in a pan or deep fryer. When hot add the coated mashed potatoes and fry till its golden brown. Take out and put on a kitchen towel to drain oil.
4. Put a pan on heat and melt butter. Add the diced onions. Stir for few minutes and add the mushroom. Add the carrot and green pepper. Stir for about 2 minutes and pour in the cream. Add the chicken stock or seasoning and little water. Add mustard and keep stirring until you have arrived at a good consistency. Taste and adjust seasoning.
5. You potatoes cake and mushroom sauce is ready to be served...Enjoy
