Full Oven Roast Chicken with Potatoes

Chicken done in the oven is always delicious however you do it the slower it cooks the better but it is always a yummy treat anytime...Made something new yesterday and it tasted reallyyyyyyyy yum! its Caramelised onion stuffed chicken baked with potatoes. Its simple not much needed and you have yourself a delicious meal...Wink

Ingredients
  • full chicken
  • potatoes peeled and halved
  • onions roughly chopped
  • thyme
  • butter (room temperature)

  • salt
  • black pepper
  • honey (optional)
  • sugar (optional)

Lets Make It...
1. Turn your oven on to 175f/350c.
2. Put a pan on heat.. Add butter. Pour in the onions. Add sugar, honey, thyme and little salt. Slow cook and keep stirring until it is golden brown. Take out and set aside.
3. In a bowl, mix butter, thyme, salt and black pepper.
4. Stuff the chicken with the caramelised onions. Gently lift the skin and rub the massage the chicken with the butter mixture. Generously rub it all over the chicken. Roll the potatoes in the butter mixture.
5. Wrap an oven dish with foil for easy cleaning. Put the chicken in it and the potatoes round the chicken. Put in the oven and bake for an hour or until all the juice runs dry.
6. Take out and enjoy...Wink
