Yam and Beans Pottage

Pottage is quite popular in Nigeria, we combine lot of different things a lot and the finished product is always delicious. I love beans and almost everything that goes with it, beans and yam, beans and plantain, beans and rice...All delicious pottage i ate while growing up and love to make them every now and then...Will be giving you the simple step i use in making mine...Pretty straight forward...Wink

Ingredients
  • beans
  • yam pealed and diced
  • palm oil
  • onions chopped
  • crayfish blended

  • seasoning
  • smoked fished deboned and shredded 
  • salt
  • pepper

Lets Make It...
1. Put a pan with water on heat, when it starts to boil, pour in the beans. Add the onions and salt. Cover and allow to cook.
2. When the beans is almost ready. Take out a seed and press with your finger, if it breaks easily then its time to add the yam. 
3. Add the diced yam. Pour in the palm oil, crayfish, smoked fish, seasoning, salt and pepper. Turn with a wooden spoon don't use an iron spoon. Taste and adjust seasoning. 
4. Allow to simmer until the yam is cooked and then you can take it out. It is ready to be enjoyed.
NOTE: You can use the exact same process to make beans and plantain and beans and potatoes, just alternate the yam for plantain or potatoes. You can also add chopped vegetables like pumpkin leaves (Ugu) if you want.
