Pork Shank

Wanted to just try out more pork recipes and saw this pretty looking pork shank at the pork stand in the super market and bought it, checked out recipes, made it for dinner and served it with oven cooked potatoes...It was absolute YUM! reminded me of Osso Bukku...Try it out...Wink

Ingredients

  • pork shank (room temperature)
  • onions diced
  • carrots diced
  • green pepper diced
  • sweet corn
  • green peas
  • garlic minced
  • chicken stock

  • salt
  • butter
  • olive oil
  • black pepper
  • tomatoes diced
  • tomatoes paste


Lets Make It...
1. Sprinkle salt and black pepper on the pork shank, massage it to make sure it goes round. Put a pan on heat. Add butter and little olive oil. Put the Pork shank and brown both side take out and set aside.
2. Turn your oven on. On the same pan on heat, pour in the onions and garlic. Stir for few minutes. Pour in the vegetables, the carrots, tomatoes, green pepper, sweet corn, and green peas. Keep stirring. Add the tomatoes paste and make sure it has dissolved into the vegetable sauce.
3. Pour in the chicken stock. Taste to adjust seasoning, i didn't need to add salt or pepper because the stock was really concentrated.
4. Put the pork stank in an oven proof dish and pour the vegetable sauce on top. Cover with foil paper and allow sit in the oven 350/175 for 3hrs.
5. When you bring it out the meat will fall off the bone, it is ready to be served with the vegetable sauce.
6. You can enjoy it with almost anything, pasta, rice, spaghetti, potatoes either mashed or boiled or oven baked like mine...Enjoy your meal
