Cannoli

Cannolis are delicious Sicilian desserts. The shells are easy to make and it is always a delicious treat every time...Wink

Ingredients
  • flour
  • sugar
  • 2 egg yolks
  • melted butter
  • cocoa powder (optional)
  • espresso (optional)
  • salt
  • little water or white wine or masala wine
  • oil for deep frying


Filling

  • ricotta cheese
  • sugar
  • vanilla
  • cinnamon
  • chocolate chips
  • whipping cream (optional)
  • lemon zest
  • orange blossom water



Lets Make It...
1. To make the crispy delicious shells: Mix flour, sugar, salt together in a bowl. Add the melted butter and egg yolks and stir well.
2. Pour in little water or white wine or masala wine and mix well until the dough clings together. Roll into a ball and let it rest for about 30 minutes.
3. Move to a floured surface and roll to almost paper thin. Cut into circles using a large cookie cutter or a glass.
4. Roll each circle of dough around a metal cannoli tube or improvise with any utensil in your kitchen with metal end i used my whisker (lol). Overlap the end and seal with egg white.
5. Heat oil in a pan or deep fryer. Fry until cooked it will take like a minute turning both sides. Move to a paper tower. Let it cool down and remove the metal tube.
6. Make the filling: Mix the ricotta cheese, sugar, vanilla, lemon zest, orange blossom water, little cinnamon and chocolate chips. If your are using whipping cream whisk well and add into the ricotta mixture. Put the mixture in the fridge for about 30 minutes.
7. Bring it out and pour into a piping bag or improvise with a ziplock or nylon in your kitchen. Fill the shells with your yummy mixture. Sprinkle chocolate chips on it. Refrigerate until ready to serve.
8. Sprinkle sugar and cinnamon on top and munch away.....hmmmmmmmmm....Yummilicious
